I love Thanksgiving dinner with family and friends. I also love what happens the day after Thanksgiving. The day after is when “The Sandwich” makes its yearly appearance. It has become a ritual for me. Slices of turkey breast, crisp bacon and Havarti cheese are placed between two lightly-toasted slices of sourdough bread that have been slathered with mayonnaise and sprinkled with garlic salt and course pepper. The rule for the sandwich is that no dark meat is allowed to enter its sacred creation.
In a couple of hours our 24 pound bird will enter the fires of re-creation to emerge for today’s feast in all its butter-smeared, crispy-skin goodness. With great anticipation, the day after it will be transformed into The Sandwich. Let all God’s children say Amen!
